- A decent, well priced, sharp knife like this one, to cut out your Jammie Dodger decoration perfectly
- A giant spatula like this will help you to move your Giant Jammie Dodger around easily without breaking it

0/0 steps made- Cream together the butter and sugar until pale and creamy
- Mix in the egg and vanilla until combined
- Sieve in the flour and fold into the mixture
- Bring together to form a dough
- Chill the dough for 1 hour if possible
- Split the dough into 3 – 2 larger portions of a similar size, and a smaller portion
- Roll out the larger portions of dough and cut into circles – this will form the base and top of your Giant Jammie Dodger
- Carefully place each one on a large baking sheet lined with greaseproof paper – make sure there is some room around the edge of the dough for it to spread whilst cooking
- (Optional) use the spare dough to cut out the shapes that you find on top of a Jammie Dodger
- Place the decoration on top of one of the circles
- Use a heart shaped cutter or a knife to cut out the centre of this one, to form the Jammie Dodger Lid
- Bake at 170°C for 25 minutes – until the biscuit is cooked through and golden
- Allow to cool fully before moving from the baking sheet
- Once cooled, spread the base biscuit with the jam, and place the lid biscuit on top
Top Tips:
- You can cream together butter and sugar by hand or using an electric whisk – handheld or in a stand mixer
- If your biscuit is not cooked through to the middle, it will break when you try to move it, so cook it a little longer if you need to – all ovens are different
- You can skip the decoration if you like, but a great way to do an effective decoration is to draw and cut out a template on paper, place it on top of the rolled out dough, and cut it out
- It’s really important to let the biscuits fully cool before moving them or putting the jam between them – or you could break them/you Giant Jammie Dodger will be a sloppy mess and won’t hold!
